The long tail cast on is my favourite cast on method. It creates an elasticated edge and gives you the first row of stitches. It also comes with the danger of running out of yarn before you've cast on the amount of stitches you need. Pick the needle size you're using and I'll tell you approximately how much yarn you'll need to cast on.
